A job shop is a manufacturer that makes parts to each customer's specification in varying quantities, rather than producing its own catalogue of products at volume.
In practice
Work arrives as a drawing, a sample or a broken component, and each job may be a single piece or a repeating run. The machines and the people are general-purpose by design.
Why it matters
It is a fundamentally different operation from a production shop. A job shop is set up to change over constantly and solve unfamiliar problems; that flexibility is what you are buying, and it is why one-off work is economic there and not elsewhere.
